What better way to celebrate Easter and the return of Spring than to indulge in a baking speciality …. cupcakes! But with family visiting & different likes and dislikes to cater for – my mother-in-law doesn’t like chocolate & my husband won’t eat fondant icing – the all important decision was what type of cupcakes to bake?! After much deliberation I decided to opt for a simple Victoria Sponge recipe, topped with strawberry buttercream, strawberry sprinkles and ….. yes that’s right, a strawberry on top! Truly scrumptious (if I don’t say so myself!).
