Fanta Chicken

Today I thought I’d share a healthy recipe – Fanta chicken! It is very low in fat and good for anyone who, if like me, is trying to be good on the diet and nutrition front. It makes a fabulous alternative to take-away sweet and sour chicken.

You will need:

3 Chicken Breasts – Diced
1 Onion – Chopped largely
2 Carrots – cut into sticks
300mls Tomato Passata
330mls Fanta Zero
1tbsp Ground Ginger
2tbsp Garlic Powder

Sweetener to taste.
Rice and pineapple to serve.

What to do (soo easy):
Fry the Chicken in Frylight till JUST cooked – don’t overdo it!  Add everything else from the recipe list and stir till fully mixed in.  It looks very runny to begin with – resembles tomato soup! But don’t worry – let it simmer for 15 to 20 mins and it’ll soon boil down to a sticky sauce. Once the sauce is as thick as you like it, serve it with boiled rice and fresh pineapple!

Stir in powdered sweetener to taste – in my experience you’ll need a few spoonfuls as the orange and tomato makes it more sour than sweet!
And lastly – Enjoy!
